Place all ranged units on the roof on the edge of the skylight. You can stab enemies in the back with enough range. When defending, try to have a long spear that won't break. Ranged units can shoot down on the ladder from the skylight while standing on the roof. The layout funnels all of the attackers up a ladder in the interior of the castle, at the top the ladder can be hit by 2 sides (front and right side) with melee weapons.
I command a high quality army of about 115-120 individuals, the CPU was able to take out about 80 of them while only having a garrison of around 150. Crakehall is a real bitch to attack, defending is easy as hell.
